פרופ' אפל עוסק בעראק המודרנית, סוריה המודרנית, היחסים בין לאומיים והזירה הבין לאומית במזרח התיכון, יחסי ישראל-ערב, המעורבות הרוסית במזרח התיכון, הכורדים והתנועה הלאומית הכורדית, הפוליטיקה הכורדית בעראק, שכבת הביניים ואפנדיה בהסטוריה המודרנית של מדינות ערב, הפוליטיקה הפנימית ועיצוב מדיניות החוץ במדינות ערב, מעורבותן של מדינות ערב בסכסוך הישראלי ערבי.
